Pumpkin tart

Although I'm not really keen on pumpkin, I have to recognize that a pumpkin tart is really delicious! but only if you know how to make it....
My grandmother recently gave me this recipe.... She made me delightful when for Halloween dinner, she cooked it in her own way... This recipe is one of those you'd like to keep for yourself and not to share!
And now, here's what you are supposed to do.

Pumpkin tart for 6 persons

It will take you 30 minutes to prepare and it will bake 50 minutes.You will need:
- one short pastry
- 500g of pumpkin
- 2L of vegetable stock
- 1 big mild onion
- 50g of diced bacon fat
- 2 eggs
- 50g of rice
- 25g of butter
- salt, pepper, nutmeg
Peel and remove the seeds from the pumpkin.

Cut it in big pieces. Put the stock on to heat.
Add the pumpkin. Let it boil slowly for ten minutes.

Peel and slice thinly the onion. On a low heat, brown the bacon. Add the onion's thin slices. Take 10cl of the stock and pour it on the onion and the bacon. Let reduce until all the water evaporates.
Preheat the oven at 180°C (or TH 6).
When ten minutes of cooking have passed, take and drain the pumpkin. Crush it with a fork. Beat the eggs as if you'd like an omelette and add the crushed pumpkin. Put salt and pepper in. Grate the nutmeg. Add the onion, the bacon, then the raw rice. Mix all ingredients.
Butter a mould for tart with large border. Spread the pastry. Garnish it with the mashed pumpkin. Sprinkle with pieces of butter. Put in the oven for 40 to 50 minutes. Serve warm.
If I may give you a piece of advice, I'd tell you to put grated cheese on it...
